  1. Cube tilapia.
  2. Chop up garlic cloves.
  3. Mix all ingredients, except red onion..
  4. squeeze all lime juice, make sure all the fish is pretty covered..
  5. Place thinly sliced onions on top.
  6. Squeeze one more lime onto the red onions.
  7. Let dish marinate for at least 3hrs. Best to let it marinate for 5hrs..
  8. You may add a side to complete the dish. Such as sweet potato, corn on the cob.

I am not a cilantro fan, but this is the only recipe in which I will. Peruvian ceviche is one of my all time favorites and the national dish of Peru. It is different, as it is typically served on lettuce leaves with sweet potatoes and crunchy toasted corn kernels. Of course it is flavored with aji chilies which are famous in Peru. Peruvian style fish cebiche or ceviche is different than the Ecuadorian ceviche that I grew up with, some of the main differences are that the ones made in Peru tend to marinate for less time in lime juice, and the use of spicy hot peppers is more common in Peruvian cebiche.
